12 13 Seared Salmon with Fruit Salsa INGREDIENTS For Salmon: • 2 tsp coriander • 4 tsp paprika • ½ tsp kosher salt • ¼ tsp black pepper • 12 oz. salmon, divided into 2 portions For Salsa: • ½ mango, peeled, pitted and diced • 1 kiwi, peeled and diced • 1 avocado, skin removed, pitted and diced • 2 Tbsp cilantro, chopped • 2 Tbsp red onion, diced • Juice of 1 lemon STEP 1: Combine the coriander, paprika, salt and pepper. Rub on the salmon and set aside. STEP 2: Combine all salsa ingredients in a mixing bowl, taste and season with additional lemon if desired. STEP 3: Heat a non-stick pan on medium. Add the salmon pieces and cook each side for 2 to 3 minutes depending on the thickness, until salmon flakes easily with a fork. Be careful not to overcook. STEP 4: Plate salmon and spoon salsa over the top. Enjoy! Serves 2. We’re seeing this shift in thinking at Hillcrest. The conversation is changing from, “When will I be ready to move to Hillcrest?” to, “How can I make sure Hillcrest is part of my future?” This shows future residents’ excitement about their future and how they want to live it. Today, we’re imagining what Hillcrest should be for the generation arriving now, and for generations to come.
